- 2 pounds baby potatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 8 ounces feta cheese
- 1 teaspoon dried oregano
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, toss the potatoes with salt, pepper, and olive oil until well coated.
- Spread the potatoes out on a baking sheet, cut side up.
