  • 2 pounds baby potatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 8 ounces feta cheese
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, toss the potatoes with salt, pepper, and olive oil until well coated.
  4. Spread the potatoes out on a baking sheet, cut side up.
  5. Place the block of feta in the center of the potatoes.
  6. Sprinkle the oregano and minced garlic over the feta and potatoes.
  7. Bake for 30-35 minutes until the potatoes are fork-tender and the feta is golden.
  8. Once done, remove from oven and sprinkle with fresh parsley before serving.
