  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups banana pudding mix
  • 3 cups heavy cream
  • 3 ripe bananas, sliced
  • ¼ cup whipped cream, for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In another bowl, beat together cream cheese, sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour the cream cheese mixture over the crust and bake for 50 minutes.
  7. Allow to cool, then refrigerate for at least 4 hours.
  8. Prepare banana pudding according to package instructions and fold in heavy cream until smooth.
  9. Spread the banana pudding over the cheesecake and top with sliced bananas and whipped cream.
