  • 4 fillets salmon
  • 2 cups fresh spinach
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and sauté spinach until wilted.
  3. Mix sautéed spinach with Parmesan cheese; season with salt and pepper.
  4. Rub salmon fillets with smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
  5. Stuff each salmon fillet with the spinach and Parmesan mixture.
  6. Place stuffed salmon on a baking sheet and bake for 15-20 minutes or until cooked through.
