Deliciously crispy on the outside and creamy on the inside, these Cheesy Mashed Potato Puffs made with turkey bacon are perfect as a snack or side dish.

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked turkey bacon, chopped
  • 1/4 cup green onions, sliced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 cup breadcrumbs

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix the mashed potatoes, cheddar cheese, turkey bacon, green onions, garlic powder, salt, and pepper.
  3. Beat the eggs in a separate bowl and then stir them into the potato mixture until well combined.
  4. Form the mixture into small balls and roll them in breadcrumbs.
  5. Place the puffs on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes or until golden brown and crispy.
