A mouthwatering Chicken Burrito Casserole that brings the flavors of a classic burrito to your family dinner table.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 flour tortillas, cut into strips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, black beans, corn, salsa, and half of the cheese.
  3. In a 9×13 inch baking dish, layer half of the tortilla strips on the bottom.
  4. Spread the chicken mixture over the tortillas and top with the remaining tortilla strips.
  5. Sprinkle the remaining cheese over the top.
  6. Bake for 30-35 minutes, until hot and bubbly.

Notes

  • For added flavor, use taco seasoning in the chicken mixture.
  • Garnish with fresh cilantro or avocado before serving.
