Colorful Layer Cake with Mascarpone Cream: A Vibrant Dessert

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter, softened
  • 5 large eggs
  • 1 cup whole milk
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 cup mascarpone cheese
  • 2 cups heavy cream
  • ½ cup powdered sugar
  • Food coloring (various colors)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, sift together the flour and baking powder.
  6. Gradually add the dry ingredients to the wet, alternating with the milk until well combined.
  7. Divide the batter evenly into separate bowls and color each with food coloring.
  8. Pour the colored batter into greased cake pans and bake for 25-30 minutes.
  9. Let the cakes cool completely before frosting.
  10. In a separate bowl, whip the cream and powdered sugar until soft peaks form.
  11. Mix in the mascarpone cheese until smooth.
  12. Layer the cakes with the mascarpone cream in between each layer.

Notes

  • For best results, use room temperature ingredients.
  • Experiment with different flavors by adding extracts.
