  • 2 pounds beef chuck roast
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 2 bay leaves
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large bowl, mix together the chopped onion, garlic, beef broth, chili powder, cumin, oregano, paprika, and bay leaves.
  2. Place the beef chuck roast in the Crock Pot and pour the mixture over it.
  3. Cover and cook on low for 8 hours or until the meat is tender.
  4. Remove the beef and shred it using two forks.
  5. Serve the shredded beef in warmed corn tortillas with chopped cilantro and lime wedges.
