A light and refreshing Asian cucumber salad that combines crisp cucumbers with zesty flavors.

Ingredients

  • 2 large cucumbers
  • 1 teaspoon salt
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons sesame seeds
  • 2 green onions, sliced

Instructions

  1. Slice the cucumbers thinly and place them in a bowl.
  2. Add salt to the cucumbers and let them sit for about 10 minutes to draw out excess moisture.
  3. In another bowl, whisk together rice vinegar, sugar, sesame oil, soy sauce, and red pepper flakes.
  4. Rinse the cucumbers under cold water to remove excess salt and pat them dry with a paper towel.
  5. Pour the dressing over the cucumbers and toss to combine.
  6. Add sesame seeds and sliced green onions before serving.

Notes

  • For a spicier version, increase the red pepper flakes.
  • This salad can be served immediately, but it’s even better after marinating in the fridge for an hour.
