  • 1 package graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/3 cup sugar
  • 2 ripe bananas
  • 1 1/2 cups whole milk
  • 1/4 cup cornstarch
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until well combined. Press into the bottom and sides of a pie pan.
  3. Bake the crust for 8-10 minutes until lightly golden. Let it cool.
  4. In a saucepan, combine milk, cornstarch, egg yolks, vanilla, and salt. Cook over medium heat until thickened, stirring constantly.
  5. Remove from heat and let it cool slightly before folding in sliced bananas.
  6. Pour the filling into the cooled crust.
  7. In a separate bowl, whip heavy cream with powdered sugar until stiff peaks form. Spread over the pie.
  8. Chill for at least 4 hours before serving.
