  • 1 whole turkey (12-14 pounds)
  • 1/4 cup olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 onion, quartered
  • 2 carrots, cut into large pieces
  • 2 celery stalks, cut into large pieces
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Remove the turkey giblets and pat the turkey dry with paper towels.
  3. Rub the turkey inside and out with olive oil, salt, and pepper.
  4. Stuff the cavity with onion, carrots, celery, thyme, and rosemary.
  5. Place the turkey breast-side up on a rack in a roasting pan.
  6. Roast in the preheated oven for about 13-15 minutes per pound.
  7. Check the internal temperature; it should reach 165°F (75°C).
  8. Let the turkey rest for 20-30 minutes before carving.
