A delicious casserole combining French onion flavors with chicken and orzo, topped with turkey bacon.

  • 2 cups orzo pasta
  • 1 pound chicken breast, diced
  • 1 large onion, sliced
  • 4 strips turkey bacon, chopped
  • 4 cups chicken broth
  • 1 cup shredded cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the turkey bacon until crispy, then remove and set aside.
  3. In the same skillet, add the sliced onions and cook until caramelized.
  4. Stir in the diced chicken and garlic, cooking until the chicken is browned.
  5. Add the orzo, thyme, and chicken broth, bringing to a simmer.
  6. Transfer to a baking dish, top with fried turkey bacon and cheese.
  7. Bake for 20-25 minutes, or until the cheese is bubbly and golden.

Notes

  • For a richer flavor, use chicken thighs instead of breasts.
  • You can substitute regular bacon for turkey bacon if desired.
