Ingredients

  • 2 pounds baby potatoes
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh rosemary, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, combine the olive oil, minced garlic, salt, pepper, and rosemary.
  4. Add the potatoes to the bowl and toss to coat them evenly.
  5. Spread the potatoes on a baking sheet in a single layer.
  6. Roast in the preheated oven for 25-30 minutes, or until golden and crispy, stirring halfway through.
  7. Remove from the oven and let them cool for a couple of minutes before serving.
