  • 1 lemon, juiced and zested

  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped

  • 1/2 teaspoon black pepper

Instructions

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the rice, coating it with the oil and garlic.
  4. Pour in the vegetable broth, lemon juice, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Remove from heat, fluff with a fork, and stir in the lemon zest and parsley.
  7. Serve warm.
