2 ripe bananas
1 cup grated carrots
1/2 cup unsweetened applesauce
1/3 cup honey or maple syrup
1/2 cup Greek yogurt
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups whole wheat flour
1/2 cup chopped nuts (optional)
Instructions
Preheat the oven to 350°F (175°C) and grease a loaf pan.
In a mixing bowl, mash the bananas and stir in the grated carrots.
Add applesauce, honey, Greek yogurt, and vanilla extract; mix well.
In a separate bowl, combine the dry ingredients: baking soda, baking powder, cinnamon, salt, and flour.
Gradually mix the dry ingredients into the wet mixture until just combined.
If desired, fold in chopped nuts.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes or until a toothpick inserted comes out clean.
