1 head cauliflower, riced
4 ounces turkey bacon
2 cups spinach, fresh
1 cup mushrooms, sliced
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a large skillet, cook turkey bacon over medium heat until crispy. Remove bacon and crumble it.
Add olive oil to the skillet and sauté garlic for 1 minute.
Add mushrooms and cook until softened.
Add the riced cauliflower and cook for about 5 minutes, stirring frequently.
