- 1 cup Arborio rice
- 4 cups milk
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs
- 1/2 cup raisins (optional)
- In a saucepan, combine rice and milk, and cook over medium heat until it starts to boil.
- Reduce heat and simmer until the rice is tender, about 20 minutes.
- Stir in sugar, vanilla, salt, and cinnamon.
- In a separate bowl, beat the eggs and temper them with a bit of the hot rice mixture.
- Gradually add the egg mixture back to the saucepan, stirring constantly until thickened.
- Remove from heat and stir in raisins if using. Serve warm or chilled.
Notes
- For a richer flavor, add a splash of heavy cream.
- Top with additional cinnamon before serving.
