A delightful and creamy rice pudding that brings back memories of home-cooked meals.

Ingredients

  • 1 cup Arborio rice
  • 4 cups milk
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup raisins (optional)

Instructions

  1. In a saucepan, combine rice and milk, and cook over medium heat until it starts to boil.
  2. Reduce heat and simmer until the rice is tender, about 20 minutes.
  3. Stir in sugar, vanilla, salt, and cinnamon.
  4. In a separate bowl, beat the eggs and temper them with a bit of the hot rice mixture.
  5. Gradually add the egg mixture back to the saucepan, stirring constantly until thickened.
  6. Remove from heat and stir in raisins if using. Serve warm or chilled.

Notes

  • For a richer flavor, add a splash of heavy cream.
  • Top with additional cinnamon before serving.
