  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 dried guajillo peppers
  • 2 dried ancho peppers
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 4 cups beef broth
  • 12 corn tortillas
  • 1 cup cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Add the beef chuck roast and brown on all sides.
  3. Blend guajillo and ancho peppers with cumin, oregano, and beef broth until smooth.
  4. Pour the blended sauce over the beef and bring to a simmer.
  5. Cover and cook for 2-3 hours until beef is tender.
  6. Shred the beef and serve with warmed tortillas, garnished with cilantro and lime.
