Ingredients

  • 2 pounds beef chuck roast
  • 1 pound lamb shoulder
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 4 cloves garlic
  • 1 onion, quartered
  • 4 cups beef broth
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 2 tablespoons apple cider vinegar
  • Salt to taste
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, combine beef and lamb with dried chiles, garlic, onion, broth, cumin, oregano, vinegar, and salt.
  2. Bring to a boil, then reduce heat to a simmer and cook for 2-3 hours until meat is tender.
  3. Remove meat, shred it, and return it to the pot to soak up the broth.
  4. Heat tortillas on a skillet and fill with the birria mixture.
  5. Serve with chopped cilantro and lime wedges.

Notes

  • To spice it up, add some jalapeños to the filling.
