- 2 pounds beef chuck roast
- 1 pound lamb shoulder
- 3 dried guajillo chiles
- 2 dried ancho chiles
- 4 cloves garlic
- 1 onion, quartered
- 4 cups beef broth
- 1 tablespoon cumin
- 1 tablespoon oregano
- 2 tablespoons apple cider vinegar
- Salt to taste
- 12 corn tortillas
- 1 cup chopped cilantro
- 1 lime, cut into wedges
- In a large pot, combine beef and lamb with dried chiles, garlic, onion, broth, cumin, oregano, vinegar, and salt.
- Bring to a boil, then reduce heat to a simmer and cook for 2-3 hours until meat is tender.
- Remove meat, shred it, and return it to the pot to soak up the broth.
- Heat tortillas on a skillet and fill with the birria mixture.
- Serve with chopped cilantro and lime wedges.
