Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar.
  3. Add in the pumpkin puree and eggs, mixing well.
  4. In a separate bowl, combine the flour, baking soda, baking powder, pumpkin pie spice, and salt.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. Drop spoonfuls of cookie dough onto a parchment-lined baking sheet.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let them cool before serving.
