- 2 pounds beef chuck, cut into 1-inch pieces
- 4 ounces turkey bacon, chopped
- 1 large onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 2 cups red wine
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 8 ounces mushrooms, quartered
- In a skillet, cook the turkey bacon until crispy. Remove and set aside.
- In the same skillet, brown the beef chuck on all sides. Transfer to a slow cooker.
- Add onions, carrots, garlic, red wine, beef broth, tomato paste, thyme, bay leaves, salt, and pepper to the slow cooker.
- Add the cooked turkey bacon and mushrooms. Stir to combine.
- Cover and cook on low for 8 hours or until the meat is tender.
- Remove bay leaves before serving. Enjoy!
