A comforting and delicious slow cooker beef bourguignon recipe featuring turkey bacon for added flavor.

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 ounces turkey bacon, chopped
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 2 cups red wine
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 8 ounces mushrooms, quartered

Instructions

  1. In a skillet, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, brown the beef chuck on all sides. Transfer to a slow cooker.
  3. Add onions, carrots, garlic, red wine, beef broth, tomato paste, thyme, bay leaves, salt, and pepper to the slow cooker.
  4. Add the cooked turkey bacon and mushrooms. Stir to combine.
  5. Cover and cook on low for 8 hours or until the meat is tender.
  6. Remove bay leaves before serving. Enjoy!
